Garden Vegetable Omelette
Fluffy eggs folded over sweet pepper, spinach, and green onion. A 15 minute breakfast that feels like a diner order.

Why it fits: Eggs and non-starchy vegetables cooked in butter, with no flour, sugar, or cheese anywhere in the pan.
Ingredients
- 6 large eggs
- 2 tbsp water
- 1/4 tsp fine salt
- 1/4 tsp black pepper
- 1 tbsp butter
- 1 cup baby spinach
- 1/2 red bell pepper, finely diced
- 2 green onions, thinly sliced
Method
- Whisk the eggs with the water, salt, and pepper until evenly blended.
- Melt half the butter in a nonstick skillet over medium heat. Cook the bell pepper and green onion for 2 minutes, add the spinach, and stir until wilted. Scrape onto a plate.
- Melt the rest of the butter, pour in half the eggs, and swirl to coat the pan. When the eggs are nearly set, spoon half the vegetables over one side and fold.
- Slide onto a plate and repeat with the remaining eggs and filling.
Swaps and notes: Swap the pepper for diced zucchini or any leftover cooked vegetables.
