Maple Walnut Blueberry Oatmeal

Why it fits: Built on a modest portion of certified gluten-free oats with lactose-free milk, a small handful of blueberries, and walnuts, sweetened with maple syrup instead of honey. No wheat or regular dairy.

  1. Combine the oats, lactose-free milk, and salt in a small pot. Bring to a gentle boil over medium heat.
  2. Reduce the heat and simmer 5 to 7 minutes, stirring often, until thick and creamy.
  3. Divide between two bowls. Top with blueberries, walnuts, cinnamon, and a drizzle of maple syrup.

Swaps and notes: Swap blueberries for sliced firm banana or strawberries. Keep the oats to about a half cup per bowl.
